Mexican Mac N Cheese

Here is a super easy, freeze-able recipe I got from my sweet friend Brittany. It is so insanely easy, not very healthy, but a yummy fast fix for lunch or dinner. My kids refused it, as it was a little spicy, but I made Shane the rest for lunch today.

2 cups elbow macaroni
1/2 cup salsa
1/2 package taco seasoning
1 cup Velvetta, cut into really small pieces

Cook the macaroni as the box directs. In a baking dish, combine everything else, and cook for about 25 minutes. Yuuuum. Might be good with some veggies thrown in, like onions, olives, or diced tomatoes next time.
